Thai Curry Chicken
Ingredients:
1 1/2 lb. chicken
1/4 onion
16 oz. coconut milk
2 tablespoons canola oil
1/2 cup chicken broth
3 red peppers
3 green peppers
2 carrot
Directions:
1. Saute onion with curry.
2. Sear chicken.
3. Add coconut milk, broth and vegetables.
4. Serve with some white rice.
