Pan Roasted Green Beans Tossed With Garlic, Lemon and Mint

This fresh and tasty dish is wonderful served with lamb or chicken. I also make it in the spring with asparagus when the price is right. It is best served at room temperature.
Ingredients:
3 tablespoons olive oil
1 lb green beans, trimmed, cut in half and steamed for 5 minutes
1/8 teaspoon red pepper flakes
2 tablespoons garlic, chopped
1/4 teaspoon kosher salt
fresh ground black pepper
2 tablespoons fresh mint, chopped
3 tablespoons lemon juice
1 lemon, zested
Directions:
1. Heat the olive oil in a large, nonstick skillet over medium high heat.
2. Add the steamed green beans and red pepper flakes and cook until just starting to turn brown, about 7 minutes, stirring or tossing often.
3. Reduce the heat to medium low and stir in the garlic, salt and pepper.
4. Cook for two minutes and stir in the mint, lemon juice and zest.
5. Cook for one minute, stirring to combine all the ingredients and remove from the heat.
6. Serve warm or at room temperature.
7. Enjoy!
