Pan Fried Eggplant

This is from my Mom's recipe cards. I have not tried this.
Ingredients:
1/3 cup cornmeal
1/3 cup flour
3/4 teaspoon salt
1 teaspoon pepper
1/4 cup parmesan cheese, grated
1 egg
2 tablespoons water
2 lbs eggplants
butter, enough for pan frying
Directions:
1. Sift together cornmeal, flour, salt and pepper.
2. Stir in cheese.
3. Beat egg and water.
4. Cut eggplant into 1/2 inch slices.
5. Roll in breading.
6. Dip into egg mixture.
7. Roll again in breading.
8. Pan fry in butter over medium heat about 5 minutes per side.
9. Turn only once.
