Pan-Fried Chicken With Tomato and Bocconcini

Simple pan-fried tasty chicken.
Ingredients:
200 g chicken breasts
1/4 brown onion
60 g bocconcini
200 g canned tomatoes
1/4 cup chicken stock
1 garlic clove, crushed
30 ml olive oil, for brushing
3 basil leaves
Directions:
1. Heat pan.
2. Brush chicken breasts with olive oil.
3. Place in pan and lightly golden each side for 2-3 minutes, or until cooked.
4. Place tinned tomatoes, garlic, chicken stock and chopped brown onion in pan over chicken.
5. Simmer for 4 minutes.
6. Add sliced bocconcini and cover pan for 5 mintues, or until cheese is melted.
7. Serve using basil leaves for garnish.
