Low calorie carrot cake with applesauce instead of oil
Ingredients:
2 cups flour
2 cups sugar
2 tsp cinnamon
2 tsp baking soda
1 tsp salt
1 1/2 cups applesauce
4 eggs
3 cups carrots (shredded)
1/2 cup sugar (powdered)
Directions:
1. Mix applesauce, eggs, and carrots in one bowl. In another bowl mix flour, sugar, cinnamon, baking soda and salt. Slowly mix dry ingredients into applesauce, eggs and carrot bowl. Grease 9 x 11 Pyrex glass cake pan and dust with flour. Cook 45 to 55 min. at 350 degrees. (Test with toothpick, should come out clean)
2. Dust with powdered sugar after cooling.
