Pamelas Homemade Chicken Noodle Soup

This is my chicken noodle soup adapted from my mom's recipe! Yummy, healthy & soothing! I make it for sick friends and family all of the time! (These are approximate measurements...you can make it to your personal taste. Read more ...very versitile)
Ingredients:
1 whole chicken, cleaned inside and out
enough water to cover chicken in stockpot
5 chicken bouillon cubes
1 clove garlic, minced
1 stalk celery, chopped
1 large carrot, chopped
1/2 yellow onion, chopped
kosher salt and pepper to taste
1 tbs parsley
approx. 1/2 pkg uncooked no yolk egg noodles
Directions:
1. Fill stockpot with enough water to submerge chicken, and add bouillon cubes.
2. Bring to a boil over high heat.
3. Once boiling, slightly reduce heat and cook chicken, with a slight boil, with lid on, but vent open (or lid slightly askew) until no longer pink. (do not overcook!) About 45 minutes
4. Carefully remove chicken from pot and transfer to a cutting board.
5. Add chopped veggies to broth and bring to a boil for 5 minutes
6. Add pasta to the chicken broth/veggie mixture. Cook according to pkg directions.
7. Add salt and pepper
8. Shred or cube chicken (carefully...it is very hot!) and return to broth, once pasta is cooked.
9. Add parsley.
10. Enjoy!
