A quick and easy treat my aunt used to make when she came over our house for a visit. It’s not something that everyone can appreciate but a lot of Filipinos like this for a light snack.
Ingredients:
2 cups sweet rice flour
1 cup water
1 cup grated coconut
1 cup sugar
1/2 cup water
Directions:
1. Mix rice flour and 1/2 cup water well.
2. Form into small balls and flatten with fingers to form into ovals.
3. Boil 1 1/2-quart in a pot.
4. Drop in boiling water 2 at a time.
5. Skim when they float and drop in cold water.
6. Drain and roll in mixed grated coconut and sugar.
7. Serve right away.
