Indian dish with split peas and greens. Serve with any meat or vegetarian main dish, chapati, or paratha, and raita or plain yoghurt.
Ingredients:
1/4 cup yellow split peas
2 tbsp olive oil
1 medium onion, minced
2 tsp garlic, minced
1/2 tsp ginger paste
1 tsp ground cumin
1 tsp paprika
1 tsp ground coriander
1 lb spinach or other green
1 tbsp lemon juice
Directions:
1. Rinse split peas, and boil in 2 cups of water. Lower heat and simmer until peas are soft but not mushy. Remove from heat and drain.
2. Heat oil in pan over medium heat. Add onion, garlic, and ginger, and sauté for 2 mins or until onion is translucent. Add spices, salt, if any, spinach,and lemon juice, and mix well. Cook, uncovered, for 2 mins or until spinach has wilted and juices have been released. Continnue to cook for 5-7 mins or until spinach is cooked and excess liquid has evaporated.
3. Stir in the cooked split peas, mix well, and cook for 1 min.
