Paige's Made up Mild Chili

My old chili was kind of boring, so I created this recipe on a whim. My fiance likes spicy chili, I like not so much spice. So I came up with this delicious in between. It has lots of fresh vegetables and can easily be changed each time you make it.
Ingredients:
1 lb ground beef
1 lb hot sausage
46 ounces vegetable juice
8 ounces chili seasoning mix (more or less to taste)
8 ounces beefy onion soup mix (more or less to taste)
40 ounces chili beans, mix
1 (15 1/2 ounce) can dark red kidney beans (optional)
1 (15 1/2 ounce) can pinto beans (optional)
1 large onion (or more if prefered)
1 green pepper
1 yellow pepper
garlic clove
salt and pepper
Directions:
1. Brown the beef and sausage.
2. Combine vegetable juice, chili seasoning, beefy onion soup mix, and all beans into large pot.
3. Chop up onion, garlic, and peppers. Optional- add some of the onion and garlic to the meat while it is browning.
4. When meat is done, add it to the pot
5. Add onion, peppers, and garlic to the pot.
6. Season with salt and pepper to taste.
7. Bring pot to a boil.
8. Simmer for about a half hour, depending how soft you like your vegetables.
9. Let cool and ENJOY! Sprinkle some shredded cheese over it, too :).
