Paczki - Little Pillow Polish Doughnuts

The following pączki recipe is one that resulted from someone trying different recipes from Polish cookbooks, until they had one like their mom Grochowski. If you try them, just remember to mix in enough extra flour at the end to make the dough comfortable to handle. Read more . They watched their mom so much that they knew what the dough should be like. If you have never made yeast dough before, just knead and add flour until the dough becomes easy to handle, but not tough. A plate of donuts with a good hot cup of coffee, tea, or hot chocolate will put a smile on everyone's face. Enjoy! And when they are made in the spring - Happy Springtime, and Wesolego Alleluja!
Ingredients:
1-1/2 cups mashed potatoes
1/2 cup potato water
2 packs yeast
1/2 cup sugar
3 egg yolks + 1 egg
1 tsp. vanilla
1-1/2 cups milk
1/2 tsp. mace
1/2 tsp. nutmeg
1/2 cup butter
6-7 cups flour
1 tsp. baking powder
1 tbsp. rum (more optional)
Directions:
1. Potatoes may be cooked in microwave and put in blender.
2. Scald milk, stir in butter, sugar and potatoes.
3. Add flavourings. Sprinkle yeast over 1/2 cup lukewarm potato water. Stir. Mix together with above mixture and beaten eggs.
4. Combine flour, baking powder and spices.
5. Gradually stir flour mixture in, mixing well to make a soft dough. Knead (mixer with dough hook can be used).
6. Let rise till double in buttered bowl, 1 to 2 hours.
7. Punch dough down and roll out on floured board to 0.5 or 0.25 inch thick.
8. Cut with glass.
9. Place on waxed paper, let rise about 30 min. (you can refrigerated overnight for holiday breakfast - take out 1 to 2 hours before frying.)
10. Fry (I use Crisco in a heavy pan.
11. Add 1 Tbsp. water to cold fat.)
12. Test fat by dropping a cube of bread in - if it browns in 1 min. it is hot enough.
13. Fat should not smoke.
14. Donuts can be turned when brown (only once).
15. Drain on absorbent paper.
16. Sprinkle with 4XXXX sugar.
17. Can also be filled with jelly.
18. Plum jelly is the norm but lemon curd or any jam or preserve is good.
