From Viva ad booklet. Courtesy of Jeannine Williams. My mon made these for as long as I can remember, and now I'm carrying on her tradition. These cheesy treats are great as an appetizer or a light meal. Serve with tomato sauce or enjoy them as is. -Jeannine Williams

2 eggs
2 cups mozzarella cheese, shredded

1. Heat 2 inches of vegetableoil in a large pot or deep fryer, until a deep-fry thermometer registers 360 degrees.
2. Mix together ricotta chesse, 11/2 c breadcrumbs and garlic powder. Roll cheese about the size of golf ball, toss in remaining 1/2 c breadcrumbs. Carefully place in oil. Fry a few at a time, about 1 minute 30 seconds.
