P90X STEAK AND ARUGULA SALAD–LEVEL III
Ingredients:
10 ounces top sirloin
4 cups arugula
1 pint cherry tomatoes, halved
1 cup canned artichoke heart, drained
4 tablespoons balsamic vinaigrette (see recipe in dressings)
Directions:
1. Grill or broil steak until done, approximately 7 to 10 minutes on each side. Cool and cut into 1-inch slices.
2. Toss together the arugula, tomatoes, and artichoke hearts and arrange on plates.
3. Top with the steak and drizzle with balsamic vinaigrette.
