Ozark Pudding (From Bon Appetite)

This pudding was served at Marshall Field's in Chicago. It is reported that Ozark Pudding was President Harry Truman's favorite dessert.
Ingredients:
1/3 cup all-purpose flour (measured then sifted)
1 1/4 teaspoons baking powder
1/8 teaspoon salt
1 egg
3/4 cup sugar
1/2 cup apple, peeled and chopped
1/2 cup pecans, chopped
1 teaspoon vanilla
Directions:
1. Preheat oven to 325°F Butter 1-quart casserole or souffle dish.
2. Sift together flour, baking powder and salt.
3. Beat egg and sugar until light and fluffy. Sir in vanilla.
4. Add flour mixture and blend well.
5. Fold in apple and nuts.
6. Spoon into prepared dish and bake 30 minutes.
7. Serve warm with whipped cream or vanilla ice cream.
