Oyster Sauce

This is a recipe I found in response to a request. It is a little different than store bought, but it works. While it is not the traditional sauce you find on store shelves, it is really quite tasty.
Ingredients:
4 tablespoons butter
1 cup onion (chopped)
8 ounces fresh oysters
2 cups oyster water
1 teaspoon thyme
1 teaspoon oregano
2 teaspoons basil
1 garlic clove (minced)
4 tablespoons butter
2 tablespoons flour
1 cup cream
salt and pepper, to taste
Directions:
1. Chop the green onions.
2. Melt the first 4 Tablespoons butter over medium heat.
3. Add chopped onions; cook until soft and translucent.
4. In a small bowl, mix oysters, oyster water, thyme, oregano, basil and minced garlic; stir. Add the chopped, cooked onions.
5. Melt the remaining butter in a medium sauce pan. Add the flour.
6. Whick together and cook over medium heat to make a thick mixture.
7. Remove from heat and add the oyster mixture.
8. Return to heat; cook the sauce over medium heat for 5 minutes.
9. Set aside.
10. Slowly stirr in cream to the sauce.
11. Add salt and pepper.
12. Serve or use in your favorite recipe. You can strain the chunks if desired.
