A salad in the tradition of chicken salad and tuna salad; oyster salad takes all of the flavors of oysters and adds them to a cool cream salad that really suits a picnic as well as a brunch table.
Ingredients:
1 pint of oysters
1/4 c cream
1/4 c white wine vinegar
1/2 tsp mustard
1/2 tsp celery seed
1/4 tsp cayenne peper
1 tbsp butter
Directions:
1. Put everything but the oysters in a double-boiler.
2. Stirring constantly, reduce to a custard-like consistency.
3. Remove from heat.
4. In a separate pan, cook the oysters in their own liquor.
5. When the liquor boils, remove from heat, drain the oysters, and mix them into the dressing.
6. Put in the refrigerator.
