Based on the classic Japanese donburi dish. A 300-calorie breakfast alone, or serve with rice for lunch or dinner.
Ingredients:
1/2 cup boneless and skinless chicken breast, chopped
1/4 cup onion, thinly sliced
1 omega-3 egg
3/4 cup egg whites
1 tbsp soy sauce, tamari, or bragg's
1 tsp sugar
1 pinch garlic powder
1 pinch ground ginger
3/10 oz sake or sherry (2 tsp)
Directions:
1. Spray a skillet with nonstick spray and heat over medium-high heat. Add chicken and stir-fry until just cooked through. Add onion and stir-fry until translucent (chicken should be beginning to brown).
2. Whisk eggs and remaining ingredients together and add to pan. Lift edges to allow uncooked egg to run under and cook until just set, then scramble. Serve immediately.
