1. trim excess fat off oxtails. 2. cut all with seasoning. 3. cover with onion rings (use a mandaline). 4. refrigerate overnight. 5. add to pressure cooker. 6. brown oxtails and onions. 7. add water and beef buillion cubes. 8. bring to a boil. 9. add carrots and lima beans. 10. pressure cook for 1.5 hours. 11. serve over coconut rice.
