Ingredients:
1 zucchini
1 yellow squash
1 red bell pepper
1 yellow bell pepper
1 lb fresh asparagus
1 red onion
3 tbsp olive oil
1 tsp salt
1/2 tsp pepper
Directions:
1. Heat oven to 450.
2. Cut all vegetables into bite sized pieces.
3. Toss with olive oil, salt & pepper (add other spices if desired) in a large roasting pan.
4. Roast for 30 minutes.
