Ingredients:
1 large potato, cut in 1-inch slices
1 yam, cut in 1-inch slices
2 carrots, cut in 1-inch rounds
1 onion, cut in 1/2-inch wedges
1 green and 1 red bell pepper, cut in 1-inch slices
2 t olive oil
1 t thyme
1 t oregano
Directions:
1. Preheat oven to 400 degree.
2. Wash and cut all vegetables; place in a large bowl.
3. Sprinkle with spices and oil; mix well.
4. Spread vegetables evenly in a large baking pan.
5. Roast 1-hour.
6. Stir occasionally.
