Oven Roasted Sweet Potato, Green Beans and Onions

Ingredients:

  • 2 cups green beans
  • 1 3/4 lb sweet potato
  • 2 tbsp olive oil
  • 1/8 tsp salt
  • 1/8 tsp pepper

Directions:

  1. Put peeled and sliced potatoes and red onions (peeled and quartered) in 450 degree preheated oven. drizzle olive oil. add salt and pepper. cook for 25 minutes. Turn over potatoes. Add green beans and cook for another 15 minutes. Add cheese and cook another 2 minutes.
