This is a delicious baked red-potatoes and peas dish. It's a great side dish for just about anything.
Ingredients:
8 large red potatoes, sliced into 1/2-inch rounds
1 large yellow onion, chopped
4 cloves garlic, chopped
1/4 cup olive oil
1 tablespoon chopped fresh rosemary or 1 teaspoon dried rosemary
1 tablespoon fresh thyme or 1/2 teaspoon dried thyme
1 tablespoon chopped fresh oregano or 1/2 teaspoon dried oregano
1 teaspoon paprika
1 dash salt and black pepper
3 tablespoons lemon juice
1 10-ounce box frozen green peas
Directions:
1. Preheat the oven to 425°.
2. In a large bowl, combine the potatoes, onion, garlic, olive oil, rosemary, thyme, oregano, paprika, salt, and pepper. Toss well.
3. Turn into a rectangular glass baking dish. Bake for 45 minutes, stirring once after 20 minutes, until the potatoes are tender.
4. Remove from the oven and pour the lemon juice evenly over the top of the potatoes. Add the green peas and stir to combine.
5. Return to the oven and continue baking for 10 minutes.
