I love making Risotto in the pressure cooker because I don't have to stand, stir, and ladle. Perfect result in about 10 minutes. So I thought, there has to be an easier way to make polenta, other then the stir stir stir method. Read more . This is it! Easy, hands free, perfect results. Try it, you'll like it.
Ingredients:
1cup coarse-ground polenta (do not use fine cornmeal or instant polenta)
kosher salt, to taste
4 cups water
2 tablespoons butter, cut into small pieces or 1 tablespoon butter and 1 tablespoon extra virgin olive oil
2 ounces grated parmesan or romano cheese
freshly ground black pepper
Directions:
1. Preheat the oven to 350 degrees F.
2. Put the polenta into a 2 quart baking dish, stir in the water and season with salt and some freshly ground black pepper. Add the butter and or butter and oil, stir in.
3. Set the dish, uncovered, in the oven and bake for 40 minutes. Open the oven and stir in the cheese, bake for 10 minutes more.
4. Remove from oven, taste and adjust seasonings. Allow to rest for 5 minutes and serve.
