Oven Glazed Baby Carrots

Carrots are fun, sweet and not green. This makes them a great food for kids. Using the tiny carrots in the bag makes this an easy dish.
Ingredients:
1 1/2 lbs of baby carrots
enough water to cover by an inch
1 cup brown sugar
3 tablespoons butter
1/2 cup water
4 tablespoons finely chopped parsley
Directions:
1. Place carrots in a pot and cover with an inch of water
2. Boil for 5 - 10 minutes until barely tender. Test with a knife frequently after 5 minutes. Do not over cook
3. Pour into a collander to drain
4. Place carrots in a baking dish
5. Combine brown suger, butter and water in a saucepan
6. Stir until the the sugar is disolved
7. Pour over carrots
8. Bake in a moderate oven (350ยบ) until glazed, basting occasionally about 20 minutes
9. Sprinkle parsley over carrots and toss gently
