Oven-Fried Zucchini with Lemon Dipping Sauce

This two-for-one recipe not only serves as an exciting side dish, but the crispy rounds of zucchini also make a delightful appetizer.
Ingredients:
3 cups (1/4-inch) sliced zucchini (2 large)
2 tablespoons fat-free italian dressing
1/4 cup italian-seasoned breadcrumbs
1 tablespoon grated parmesan cheese
1/2 teaspoon paprika
cooking spray
1 teaspoon olive oil
lemon dipping sauce
Directions:
1. Preheat oven to 450°.
2. Combine zucchini and Italian dressing in a medium bowl; toss well to coat.
3. Combine breadcrumbs, cheese, and paprika in a shallow dish. Dredge zucchini slices in breadcrumb mixture, and place on a jellyroll pan lined with foil and coated with cooking spray. Drizzle zucchini evenly with olive oil.
4. Bake at 450° for 15 minutes. Serve immediately with Lemon Dipping Sauce.
