Oven-Fried Chicken Tenders with Honey-Mustard Dipping Sauce

Oven-Fried Chicken
Ingredients:
1/4 cup honey
1/4 cup dijon mustard, grainy
1 1/2 lbs chicken (about 2 chicken tenders per serving)
1/2 cup low-fat buttermilk
3/4 cup corn flakes, coarsely crushed
1/4 cup seasoned bread crumbs
2 tsp onion powder
1 tsp paprika
1/4 tsp dried thyme
Directions:
1. Preheat oven to 400.
2. Combine Honey and Mustard in a small bowl. Cover and set aside.
3. Combine Chicken and Buttermilk in a shallow dish. Cover and Refrigerate for 15 minutes. Remove Chicken and discard liquid.
4. Combine Corn Flakes, Bread Crumbs, Onion, Paprika, Thyme, and Pepper in a large sealable plastic bag.
5. Add 1/4 of the chicken at a time. Seal and shake to coat.
6. Spray baking sheet with Non-Stick Spray. Arrange Chicken in a single layer on the pan. Salt & Pepper to taste. Bake for 5 minutes on each side, or until done, in 400 degree oven.
7. Serve with Honey-Mustard Sauce.
