Oven Fried Chicken Tenders

Ingredients:
2 lbs chicken breasts
1/2 cup buttermilk
2 tablespoons reduced-calorie stick margarine
1 2/3 cups buttermilk pancake mix
1/4 teaspoon pepper
1/4 teaspoon salt
1 1/2 teaspoons paprika
Directions:
1. Preheat oven to 350.
2. Cut chicken into chunks.
3. Combine pancake mix, pepper, salt, paprika into a shallow bowl.
4. Dunk the chicken into the buttermilk and roll into dry misture.
5. Spray cookie sheet with nonstick spray.
6. Place coated chicken on sheet.
7. Drizzle melted margarine over the chicken.
8. Bake 30 to 45 minutes until lightly browned.
