This is a healthy version of fried chicken. The flavor is outstanding!
Ingredients:
4 to 6 chicken breast halves
1 cup buttermilk
2 crumbled corn flakes or dry breadcrumbs( i like the corn flakes the best, it gives it a great crunch)
1/2 cup grated parmesan cheese
1 tbs. rosemary flakes, thyme, and parsley flakes
1 tbs garlic salt
red pepper to taste
salt and pepper to taste
Directions:
1. Remove skin from chicken.
2. Mix together corn flake crumbs, parmesan cheese, rosemary, thyme, parsley, garlic salt, red pepper, salt and pepper.
3. Dip chicken into buttermilk, then herb mixture.
4. Place chicken on a foil-lined pan that has been sprayed with a non stick vegetable cooking spray.
5. Bake 1 hour at 350 degrees
