low fat and calorie fried chicken-very good - needs to cook longer than 35 minutes
Ingredients:
3/4 cup low fat buttermilk
4 chicken breast
1/2 cup all purpose flour
1 teaspoon salt
1/2 teaspoon ground red pepper
1/4 teaspoon cumin
1/4 teaspoon white pepper
1 cooking spray
Directions:
1. Marinate chicken in butter milk 1 hour
2. Preheat oven 450 degrees
3. Combine dry indredients in a second large zip lock bag. Remove chicken, discard marinade-add chicken from bag,shaking off excess flour-lightly coat each chicken piece with cooking spray. REpeat. Place chicken on baking sheet lined with parchment paper. Lightly spray again. Bake until done-about 1 hour-turn once.
