Ingredients:
2 lbs red potatoes, cut as long wedges
1/3 cup olive oil
1 large onion, chopped
1 teaspoon coarse kosher salt
fresh ground pepper
Directions:
1. Pre-heat oven to 400.
2. Combine ingredients in 9x13 roasting dish.
3. Bake uncovered, stirring occasionally, for 45-50 minutes or until potatoes are soft and golden brown.
