Ingredients:
1/2 green pepper
1/2 red pepper
1 small onion
1 small squash
3/5 zucchini
1 tsp smart balance
1/2 tsp garlic
1/2 tsp seasoned salt
1/2 tsp cajun seasoning
Directions:
1. cut veggies in to chunks, toss with smart balance oil (or olive oil), season with spices (I like tony's cajun seasoning), cover with foil and bake for 30-45 minutes at 350
