Oven-Baked Brown Rice Casserole

A stick-to-the ribs, healthy, comparatively low-calorie vegetarian main dish. Makes 4 one-cup servings.
Ingredients:
1 1/2 cups brown rice
2 1/3 cups water
1 t bouillon
1 cup sliced mushrooms
1 cup chopped onions
Directions:
1. Adjust the oven rack to middle position; heat oven to 375 degrees. Spread rice in greased casserole dish. Mix in mushrooms and onions.
2. Pour boiling water in casserole. Mix in bouillon and stir.
3. Cook covered for 60 to 75 minutes.
4. Remove baking dish from oven and uncover. Fluff rice with dinner fork and let stand for 5 to 10 minutes.
