I found this recipe off of a Soy Flour package from Bob Red Mill. They are pretty tasty muffins and a little healthier then the average.
Ingredients:
1/3 cup soy flour
1/3 cup brown sugar
1/3 cup cornmeal
1 cup whole wheat flour
1/4 cup wheat germ
3/4 teaspoon salt
1 cup ground almonds
1 teaspoon baking soda
2 eggs, beaten
1 cup yogurt
1 teaspoon vanilla
1/3 cup oil
1 orange, zest of
1/3 raisins or 1/3 currants
1/2 cup dried apricot, diced
Directions:
1. Preheat oven to 350 degrees.
2. Mix dry ingredients and dried fruit together in a large bowl.
3. Combine liquid ingredients and stir into dry ingredients just until moistened.
4. Batter should be lumpy.
5. Fill oiled or paper-lined muffin tins 2/3 full.
6. Bake in preheated 350 degree oven for 20-25 minutes.
