Outback Steakhouse Bloomin Onion

Okay I went to the food pantry again, I love free food, I got a 50 pound bag of onions. So yes I went out and found a Blooming Onion recipe and tweeked it to my family. We also got a case of sour cream, so even the sauces were a breeze.
Ingredients:
4 vidalia or texas sweet onions
batter
1/3 c. cornstarch
1 1/2 c. flour
2 tsp. garlic -- minced
2 tsp. paprika
1 tsp. salt
1 tsp. pepper
24 oz. beer, we used sprite, sweeter taste (allergic to hops!)
seasoned flour
2 c. flour
4 tsp. paprika
2 tsp. garlic powder
1/2 tsp. pepper
1/4 tsp. cayenne pepper
creamy chili sauce
1 pint mayonnaise
1 pint sour cream
1/2 c. chili sauce
1/2 tsp. cayenne pepper
ranch sauce
1 pint mayonnaise
1 pint sour cream
1/4 cup butter milk
1/4 cup ranch dressing mix, found in my recipes
Directions:
1. What this requires is a sharp knife and a steady hand.
2. Use a LARGE onion, it is easier.
3. Peel the onion, and slice enough off of one end so that it will stay upright by itself.
4. Now, slice the onion vertically in a series of 1/4 - 3/8 parallel slices, stopping 1/2 shy of the bottom.
5. Rotate the onion 90 degrees, and repeat.
6. Place the onion in ice water, and let sit for at least 1 hour.
7. (This causes the 'bloom' to open up.)
8. Remove about 1 of petals from center of onion.
9. You could also just cut the onion with an apple cutter, it cuts out the core. Then do the Ice thing. There is also a Blooming Onion Machine, or so I've read. I quess they are pretty hard to find..
10. Mix cornstarch, flour, and seasonings until well blended.
11. Add beer or sprite, mix well.
12. Dip onion in seasoned flour and remove excess by shaking.
13. Separate petals and dip in batter to coat thoroughly.
14. Gently place in fryer basket and deep-fry at 375 to 400 for about 1 1/2 minutes.
15. Turn over, and fry an additional 1 1/2 minutes.
16. Then I placed these on cookie cooling racks on a cookie sheet.
17. I baked them at 250 for 10 minutes. All, well lots, of the grease dripped out onto the paper towels I had under the racks. Healthier that way.
18. Drain on paper towels.
19. Serve hot with Creamy Chili Sauce. Or I also served ranch dip using the sour cream and the Ranch Dressing Mix Recipe I have up out here. My daughter just likes this with ketchup....
20. If you have little serving cups, put the sauce in them and place them in the center of the onion. Thats how they serve them at the Outback. These are also served at Ren Faires.
