Outback Steakhouse Aussie Fries

First had these at Outback.. and then found on line.. Not sure but I think Recipe trove.. I had copied to word.. I like to add thin sliced green onions on top when taken out of oven.. Enjoy!
Ingredients:
1 - 2 lb. bag of frozen french fries
1 cup shredded colby jack cheese
6 pieces of bacon, cooked
24 fl. oz. peanut oil (can be reused later; store
in refrigerator)
dipping sauce
1/2 c. sour cream
1 tbsp. prepared horseraddish
dash cayenne pepper
dash salt
dash black pepper
Directions:
1. Divide the fries into half, and use the other half later.
2. Heat oil to 350 degrees.
3. If you do not have a thermostat, make sure
4. the oil is hot enough, so that when you set a french fry in there it
5. will cook immediately. If the french fry sinks to the bottom, and
6. barely bubbles, it is not hot enough.
7. Fry the potatoes in small batches, they are done when they are golden brown, and float to the top of the skillet. I use a Fry Grandpappy
8. Drain the potatoes on paper towels. You can keep them warm in the oven while the other fries are done.
9. When all french fries are done cooking, and drained place them onto a platter.
10. Salt the french fries if you like, and sprinkle on cheese
11. and cooked bacon. Pop these back into a warm oven ( 325)until the cheese begins to melt.
12. If you want to add thin sliced green onions.. do it after oven.
13. DIPPING SAUCE:
14. Combine all ingredients and mix well.
