Yes, I know there are about a million sweet potato casserole recipes out there - I have tried quite a few and this one is the favorite of DH and myself. Instead of marshmallows, which neither of us care for, it has a wonderful, sweet crunchy topping. It is a Thanksgiving staple at our house and we look forward to making it every year.
Ingredients:
3 medium sweet potatoes, cooked and mashed
1 (8 ounce) can evaporated milk
1/2 cup butter, melted
1/2 teaspoon cinnamon
2 cups sugar
3 eggs, large
1 teaspoon vanilla extract
1 pinch salt
1 cup brown sugar
1 cup pecans, chopped
1/3 cup butter, melted
1/3 cup self-rising flour
Directions:
1. Preheat over to 350 degrees. Grease a 9x13 casserole dish.
2. Mix sweet potatoes, evaporated milk, butter, cinnamon, sugar, eggs, vanilla and salt well.
3. Pour into casserole dish and bake for 30 minutes.
4. While sweet potatoes are baking, combine topping ingredients.
5. After 30 minutes, remove sweet potatoes from oven; cover with topping.
6. Bake an additional 20-30 minutes until topping is brown.
