Melissa D'Arabian's show is $10 Dinners. DK about you, but I'm all about cooking more economically these days. This went beautifully with the salmon cakes. Melissa called this the busy cook's risotto , because it comes out all creamy without the time commitment. Ingredients:
1 1/2 cups chicken broth |
2 cups water |
pinch dried red pepper flakes |
1 garlic clove, minced |
3/4 cup orzo |
zest of 1/2 lemon |
2 tablespoons fresh chopped thyme leaves |
salt |
Directions:
1. In a medium saucepan, add the broth, water, pepper flakes, and garlic and bring to a boil over high heat. 2. Stir in the orzo, lower the heat, and simmer until most of the liquid has been absorbed, stirring occasionally, about 10 minutes. 3. Remove from the heat, and stir in lemon zest and thyme leaves. Season with salt, to taste, and serve. |
