Ingredients:
1 cup uncooked orzo (rice-shaped pasta)
1 (15.5-ounce) can cannellini beans, rinsed and drained
2 cups firmly packed arugula
2 tablespoons fresh lemon juice
Directions:
1. Cook orzo according to package directions, omitting salt and fat. Drain.
2. Combine orzo, beans, arugula, and lemon juice in a large bowl.
