Orzo and Vegetables

Ingredients:
1 cup orzo pasta
4 cups broccoli florets
1/2 cup marinated artichoke hearts, coarsley chopped
6 ounces canned ripe olives, chopped
2 medium tomatoes, chopped
2 scallions, chopped
2 tablespoons olive oil
3 tablespoons red wine vinegar
1/4 teaspoon garlic salt
1/4 teaspoon pepper
1 cup diced cooked chicken
6 cups mixed salad greens
Directions:
1. In a large pot of boiling salted water, cook orzo, 6 minutes. Add broccoli to pot and cook 4-5 minutes longer. Drain.
2. Add artichoke hearts, olives, tomatoes, scallions, oil, vinegar, garlic salt, pepper and chicken to the pot, tossing well.
3. Serve on mixed salad greens.
