a beef, vegetable chili thats low in carbs and high in fat and protein. A good winter warming dish!
Ingredients:
3 lbs ground beef
3 lbs round steaks or 3 lbs beef stew meat, cut into small cubes
2 (28 ounce) cans stewed tomatoes
46 ounces spicy hot v8
2 (1 1/2 ounce) packages dry onion soup mix
1 large onion, chopped
3 celery ribs, chopped
2 green peppers, seeded & chopped
2 banana peppers, chopped
1/2 cup banana pepper juice
1/2 cup white vinegar
2 garlic cloves, crushed
1 bay leaf
3 ounces chili powder
1/4 cup barbecue sauce
1/4 cup catsup
1/4 cup liquid hot pepper sauce
2 teaspoons cumin powder
2 teaspoons beef bouillon granules
2 teaspoons salt
1 teaspoon oregano
1 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon black pepper
1 dash red pepper
1 dash basil
1 dash thyme
1 dried red pepper
1 -2 cup beer (guiness works best)
Directions:
1. in a large pot, brown the ground beef, drain off excess fat and discard. add cubed round steak, tomatoes, V8 juice, onion soup mix, onion, celery, green peppers, banana peppers, banana pepper juice, vinegar, garlic, bay leaf, chili powder, BBQ sauce, ketchup, liquid hot pepper sauce, cumin powder, beef bouillon granules, salt, oregano, onion powder, paprika, black pepper, crushed red pepper, basil, thyme and dried red pepper.
2. bring the mixture to a boil, reduce heat and simmer for 2 hours, stirring often. correct seasoning and add beer to taste. simmer for 1 hour stirring occasionally.
3. makes about 6 quarts of chili.
