Oriental Veggie Tvp Fried Rice

This is a well-balanced dish, full of protein from the TVP and vitamins from the veggies! Combined with a hearty brown rice blend and you've got yourself a delicious meal! Great for lunch or dinner! The TVP adds a nice hearty texture to the dish. Read more . ** Note: This dish may be on the salty side for some, so for the stir fry sauce, feel free to make it more diluted.
Ingredients:
0.25 c dried tvp granules
0.25 c water
1 tsp soy sauce (reduced sodium)
0.25 tsp sesame oil
cooking spray
1 tsp minced garlic
1 c frozen oriental mix vegetables (or any other mix, you may also use any combination of fresh veggies)
0.5 c cooked (leftover) rice (half brown, half white, or whatever)
0.5 tsp garlic powder (optional)
0.5 tbsp vegetarian oyster sauce
1 tsp soy sauce (reduced sodium)
1 tbsp water
1/8 tsp concentrated chili sauce (optional)
Directions:
1. The first four ingredients are for reconstituting the TVP
2. Pour the water, soy sauce & sesame oil over the dry TVP in a microwaveable bowl
3. Microwave for 4 minutes (you may wanna stop after 2 minutes and stir it up a little). Then set it aside.
4. Take a skillet, lightly coat it with cooking spray and let it heat up
5. Sprinkle water on the surface to see if it is hot enough. If the water sizzles away, it's ready.
6. Brown the minced garlic
7. Add the vegetables, add some water to create some steam, stir for about 2 minutes.
8. Add the rice and continue stirring.
9. Now add the reconstituted TVP.
10. Throw on some garlic powder for extra garlicky flavor!
11. Add the sauce (the last four ingredients, and mix this up before hand).
12. Continue stirring till everything is evenly coated with the sauce.
13. Serve it hot & steaming!
