This recipe was given to me years ago by a friend and since then I've passed it on to many other people. In our house, we refer to it as Kayla's Rice because my daughter's grade school friend came over years ago and had dinner with us. Read more . She went absolutely nuts over it and insisted I give her mother the recipe. Serve with your favorite egg rolls, Asian soup, or salad and you've got a complete meal.
Ingredients:
3 or 4 eggs, beaten, without milk
3 tbsp. oil
4 cups cooked rice (minute rice works well, made up ahead of time)
2 cooked chicken breasts, shredded or cut into small pieces (if i'm in a hurry, i use canned chicken breast that has been well rinsed)
3 - 4 thinly sliced green onions (use white and green parts)
2 tbsp. soy sauce
1/2 tsp. sugar
Directions:
1. Fry beaten eggs in oil until firm. Chop up egg. In the same pan after egg is cooked, add meat and onion; cook over medium heat for 3 - 4 minutes. Add cooked rice. Mix soy sauce with sugar and drizzle over rice. Stir until hot.
2. Serve with extra soy sauce.
3. Can also add mushrooms, pea pods, and/or water chestnuts.
