A little different salad. Good as an appetizer or a side salad. Chill time not included in prep time.
Ingredients:
4 cups napa cabbage or 4 cups chinese cabbage
1 (8 ounce) can crushed pineapple, drained
1 (8 ounce) can water chestnuts, drained and sliced
1 cup cilantro or 1 cup parsley, chopped
1/4 cup scallion, sliced
1/4 cup low-fat mayonnaise
1 tablespoon mustard
1 teaspoon ginger, grated
Directions:
1. Combine first five ingredients.
2. Cover and chill in refrigerator at least 1 hour.
3. Combine next three ingredients.
4. Cover and chill in refrigerator at least 1 hour.
5. Toss dressing with cabbage mixture and serve.
