An easy and perfected version of a big favourite. Taking the best parts of three other Oreo Cheesecake recipes I've tried before, I've combined them into the one below. My guests tell me they love me forever whenever I serve this! Read more ! Njoy
Ingredients:
base
250g oreo cookies
100g unsalted butter
filling
15 oreo cookies, coarsely chopped
1 x 400g pack of philadelphia cream cheese, original
250 ml double cream
50g icing sugar
1tbsp vanilla extract
topping
6-12 oreo cookies, finely ground (depends on ur preference!)
Directions:
1. Finely grind the 250g of Oreo cookies. Melt the 100g of unsalted butter in the microwave or on the stove and add to the cookie crumbs. Pulse/mix till well combined.
2. Press onto the base of a loose bottomed springform pan (13x9) and push a little up the sides to create a small ridge.
3. Refridgerate the base while preparing the filling.
4. In a large mixing bowl, use an electric whisk to combine the Cream Cheese, Vanilla extract and Icing Sugar.
5. In a seperate bowl/jug, use the same whisk to give the double cream a little beat. Once it starts to thicken up, add to the cream cheese mix and whisk a little more till you have a thick, but still creamy consistency.
6. Fold in the 15 coarsely chopped Oreos till evenly spread around the mixture.
7. Pour filling over the cookie crumb base and smooth out till flat and even.
8. Finely grind the remaining Oreos for the topping (I use six for a very thin layer of crumb, but some like a thicker one so feel free to use more if you do too!) and sprinkle evenly over the filling.
9. I like to use a pastry brush to gently spread them over the filling without disturbing the cream cheese!
10. Refridgerate for 4 hours, or overnight.
11. TIP:
12. When I want to add a little wow factor, I cut out the OREO letters from one of the cookie packets and use it as a template to dust Oreo in icing sugar onto the top of my cheesecake (see my pic). Afterall..we do eat with our eyes first....
