I clipped this from our newspaper; on Tuesdays they run a cooking 'cartoon' that's called Cheap Thrills Cuisine. Oftentimes, it's a really yummy and easy recipe. These cookies were one of them; fun, different, and very yummy! Read more !
Ingredients:
20 candy orange slices, like sunkist gems
3 1/4 c. flour, divided
1 1/2 tsp. baking powder
1 1/4 tsp. baking soda
1 tsp. salt
2 c. shortening
2 c. packed brown sugar
1 c. granulated sugar
3 eggs
1 tsp. vanilla
3 tbsp. water
3 c. quick-cooking oats
1 c. coconut
zest of one orange
Directions:
1. ***Cook time includes chill time and total baking time for all cookies***
2. Very finely chop candy orange slices. Mix together with 1/4 c. of the flour. Set aside.
3. Sift together the remaining 3 c. flour, baking powder, baking soda, and salt. Set aside.
4. In large bowl, cream together shortening and sugars until fluffy. Beat in eggs, vanilla, and water. Stir in flour mixture.
5. Stir in oats, coconut, orange zest, and orange slice mixture. Chill dough for at least 1 hour.
6. Drop level tablespoonfuls onto greased cookie sheets. Bake at 325 degrees F for 12 - 14 minutes. Makes 8 - 10 dozen cookies.
