I hosted a cookie exchange way back in 1987 when we lived in central IL, and this recipe came from a neighbor - such good cooks lived in that neighborhood...I miss them all! Orange Slices Candy inside a cookie - you can't go wrong.
Ingredients:
2 cups unsweetened cornflakes, crushed
sweetened flaked coconut, optional
2 cups flour, divided into 11/2 cups and 1/2 cup
1 teaspoon baking soda
1/4 teaspoon salt
11/2 cups packed brown sugar
1/2 cup butter, room temperature
2 eggs
1 pound orange slices candies, diced
Directions:
1. Place cornflakes in a gallon size plastic bag and crush finely.
2. If desired, add sweetened coconut (1 cup or a bit less is plenty) to the crushed cornflakes. Set aside.
3. In a separate bowl, stir together 11/2 cups flour, baking soda and salt. Set aside.
4. In another bowl, cream together brown sugar and butter.
5. Add eggs and beat batter until light and fluffy.
6. Stir in flour mixture, blending ingredients together well.
7. Stir in the contents from the crushed cornflakes bag.
8. In a shallow dish, toss diced orange slice candy pieces with remaining 1/2 cup flour; gently mix this into the cookie batter.
9. Shape dough into 11/2 inch balls.
10. Place balls on lightly greased baking sheets, and then press down each ball with the tines of a fork.
11. Bake at 325 degrees for 10 to 12 minutes, until bottoms just barely begin to brown.
12. Remove cookies from baking sheet and cool on waxed paper.
13. Keep cookies in a tightly covered container with waxed paper between layers.
