Orange Polenta Pudding

Fans of rice pudding/ creamed rice will enjoy this one. makes 2 rgenerous serves. This recipe doubles easily.
Ingredients:
1 cup milk
1/2 cup polenta/corn meal
1 tablespoon cornflour
2/3 cup milk extra
1/4 cup white sugar
1 teaspoon vanilla extract
1 orange, peeled, sliced
Directions:
1. Preheat oven to 200C
2. Pour milk into a medium saucepan and to the boil. Add the polenta in a thin steady stream, stirring constantly. cook for about 5 minutes, till it gets all thick like. Remove from heat.
3. In a small saucepan, combine the cornflour and a little of the extra milk to form a paste. Add the rest of the milk. Heat this mixture, stirring constantly, till it boils and thickens, like cream consistency.
4. Stir the sugar and vanilla into the milk mixture and add to the polenta.
5. Spoon into a baking dish and top with the orange slices.
6. Bake for 20 minutes or till golden.
7. Serve with a scoop of ice cream if you want.
8. * instead of making the cornflour mixture, you could just use 90 mls of pouring cream if you dont care about the fat content.
