A flavorful quick bread from the Western chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.
Ingredients:
1 tablespoon butter, softened
3/4 cup sugar
1 egg, beaten
4 cups flour, sifted
4 teaspoons baking powder
1/8 teaspoon salt
2 cups milk
1 cup candied orange peel, chopped (store-bought or rays of sunshine - homemade candied orange peel)
Directions:
1. Preheat oven to 350F and grease loaf pans very well.
2. Sift dry ingredients together.
3. Cream butter and sugar together until thoroughly mixed.
4. Add egg and beat until fluffy.
5. Add flour alternately with milk to the batter and beat until well-blended.
6. Stir in orange peel and pour into prepared pans.
7. Bake about 40 minutes or until bread tests done.
