Orange Marmalade Glazed Yams or Sweet Potatoes

this recipe is from an old community cookbook that i picked up at a garage sale.. The Cookbook is from the National Council of Jewish Women -? date This recipe was put into the cookbook by Sheila Weilheimer. This recipe makes wonderful, abeit a bit different, Yams. The recipe is very easy to make. I have changed some of the directions to make things clearer. I also added a bit of butter ( the original recipe had none so this could be made that way-fat free!) . YUM
Ingredients:
40 ounces cut yams in syrup (or sweet potatoes)
3/4 cup orange marmalade
1/4 cup butter
1/4 cup flaked coconut
Directions:
1. 1. Preheat Oven to 350 degrees F.
2. 2. Drain Yams, reserving syrup.
3. 3. Place yams side by side into a 8 x 8 baking dish.
4. 4. Mix the marmalade with the reserved syrup.
5. 5. Boil the mixture, stirring constantly, until it is the consistency of corn syrup.
6. 6. Pour over the sweet potatoes.
7. 7. Dot butter over top.
8. 8. Sprinkle the top with coconut.
9. 9. Bake 10 minutes covered with foil . remove foil and bake 5-10 minutes longer or until the coconut is golden.
