A treat for the kid in everyone, this delicious dessert is a take on the classic orange and cream ice cream bar. It's a breeze to prepare, as marshmallows are the base of the dish. This is a recipe from a cookbook that I just bought called Betty Crocker Country Favorites. The cooking time listed is for the refrigeration time.
Ingredients:
22 large marshmallows (or 2 cups miniature marshmallows)
1 teaspoon orange peel, grated
2/3 cup orange juice
1 cup heavy whipping cream
Directions:
1. Heat marshmallows, orange peel and orange juice over medium heat, stirring constantly, until marshmallows are melted. Cool about 15 minutes, or until thickened.
2. Beat whipping cream in chilled medium bowl until stiff. Stir marshmallow mixture to blend, then fold into whipped cream.
3. Divide amount 6 dessert dishes. Refrigerate about 2 hours or until set. Refrigerate any remaining dessert.
