Ingredients:
1 cup butter, softened
1 cup confectioners' sugar
1 egg yolk
2 tablespoons orange juice
2 teaspoons grated orange peel
2 cups king arthur unbleached all-purpose flour
1/2 cup cornstarch
1/2 cup macadamia nuts or blanched almonds
frosting:
1 cup confectioners' sugar
4 teaspoons butter, softened
1 tablespoon orange juice
1/2 teaspoon grated orange peel
Directions:
1. In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in the egg yolk, orange juice and peel. Combine flour and cornstarch; add to creamed mixture and mix well. Stir in nuts.
2. Roll into 1-1/4-in. balls; place 2 in. apart on ungreased baking sheets. Gently flatten with the bottom of a glass dipped in sugar. Bake at 350° for 12-15 minutes or until edges begin to brown. Remove to wire racks to cool completely.
3. Combine frosting ingredients in a bowl; beat until smooth. Frost cookies. Yield: about 3-1/2 dozen.
